LESBO'S "OVEN" BARBECUE RIBS & SPRING SALAD RECIPE!

MY SPRING SALADS ARE REALLY SIMPLE & QUICK TO PREPARE! FOR A GUY LIKE ME WITH MY SCHEDULE, THOSE ARE THE ELEMENTS (QUICK & EASY) THAT MAKE MY DINING DURING THE WORK WEEK A NICE CONCLUSION TO MY LONG DAYS.

SALAD PREP:
JUST HIT THE LOCAL H.E.B. UP FOR A SPRING SALAD MIX (THEIR ALWAYS FRESH THERE) & GRAB A BAG OF SOME SHREDDED CARROTS & BUTTER CHIP PICKLE SLICES. YOU DEFINITELY WANT TO GRAB SOME CROUTONS (YOUR FAVORITE VARIETY IS FINE) & SOME GREEN ONIONS ALSO.

I USE THE SUN DRIED TOMATO DRESSING TO TOP OF THE SALAD ACCOMPANIED BY THE FISH. I USE BACON RANCH FOR THE SALAD ACCOMPANIED BY THE TUNA.

THE BUTTER CHIP PICKLE SLICES ARE TO BE USED AS A GARISH THAT YOU CAN ENJOY SNACKING ON AFTER THE FACT OR WITH YOUR SALAD.

FISH PREP:
TAKE A SINGLE CATFISH FILLET (OR ANY VARIETY OF FISH FILLET) & RUB THE FILLET DOWN IN OLIVE OIL BEFORE THEN RUBBING IT DOWN IN A MIXTURE OF BLACKENING SEASONING & "SWEET" BARBECUE RUB SEASONING.

THEN GRILL OFF YOUR FILLET UNTIL IT'S DONE TO YOUR LIKING, WHILES SQUEEZE A GENEROUS HELPING OF LIME OVER THE FILLET ALSO AS ITS COOKING.

ONCE YOUR FILLET IS DONE TO YOUR LIKING, PLACE IT ATOP YOUR BED OF SPRING SALAD & SUN DRIED TOMATO DRESSING & ENJOY!

TUNA:
PLACE A TABLE SPOON OF DICED RED BELL PEPPER, GREEN ONIONS (AMOUNT TO YOUR LIKING), & A TABLE SPOON OF FINELY DICED CARROT SHREEDS IN A BOWL.

THEN ADD TWO 6OZ CANS OF TUNA, ONE TABLE SPOON OF DICED PIMENTO & 2 TABLE SPOONS OF RANCH DRESSING.

THEN STIR GENTLY TIL ALL THE INGREDIENTS ARE MIXED EVENLY & THEN ADD THE TUNA SALAD ATOP YOUR BED OF FRESH SPRING SALAD & ENJOY!

LESBO'S OVEN BAKED RIBS:
THIS IS SO SIMPLE FOLKS IT'S A CRIME! THE DEAL IS YOU WANT YOUR OVEN BAKED RIBS TO COOK UP TENDER, BUT YET HOLD FIRM, LIKE WHEN PREPARED ON THE GRILL OUTDOORS ...RIGHT?

WELL, RUB YOUR RIBS DOWN IN SOY SAUCE & ORIENTAL SESAME SEED MARINADE. THEN RUB THEM DOWN GOOD IN A "SWEET" BARBECUE RUB (TRY THE EARL CAMPBELL RUB).

OK, NOW THIS IS IMPORTANT. PRE-HEAT YOUR OVEN TO 425 DEGREES & USE TWO "DEEP" BAKING PANS TO PREPARE YOUR RIBS IN.

PUT 4 CUPS OF WATER IN ONE PAN & PLACE THE SECOND PAN INSIDE THE PAN WITH THE FOUR CUPS OF WATER. SPRAY SOME "NO-STICK" SPRAY ON THE DRY PAN & THE PLACE YOUR RIBS IN THE PAN.

NOW PLACE YOUR RIBS IN THE OVEN & DO NOT COVER THEM WITH FOIL OR ANY TYPE OF LID.

KEEP A CLOSE WATCH ON THEM OVER THE NEXT HOUR OR SO & THEY WILL COOK TENDER, WHILE REMAINING FIRM AS IF YOUR GRILLED OF OUTSIDE. THE ORIENTAL MARINADE WILL ALLOW THEM TO DARKEN AND COOK TO A MOIST BUT FIRM TEXTURE ...ENJOY!
